Ziti with Asparagus, Smoked Mozzarella and Prosciutto

This was one of the very first (and favorite) Giada recipe that I made and I was so excited when I realized that the recipe was in Everyday Italian, the cookbook.   I love this recipe because it is the epitome of spring.  There is no sauce, you use the stock from the pasta and so the dish is super light and healthy.  One thing to note, be sure not to overcook the asparagus. They only need to be in the boiling water for 1 minute. So DO NOT walk away from the stove because I promise you that you’ll be gone for more than a minute and you’ll overcook the asparagus. 😀
